Chicken and Quinoa Stir Fry | Recipe

Not long ago I posted a picture on instagram of this Chicken and Quinoa stir fry that I made. I'm really getting into quinoa at the moment, it's such a fantastic grain with so many benefits...and it pretty much goes with anything.

So I had a few people respond to my picture asking for the recipe, which made me chuckle because I'd literally just chucked a bunch of stuff in the skillet and fried it. But the people want a recipe so the people will get a recipe and here it is...enjoy.


Ingredients

  • 250g chicken breast (diced)
  • 1 medium sweet potato (peeled and chopped into small cubes)
  • 2 good handfuls of curly kale
  • 100g green beans (chopped)
  • 1 medium red onion (peeled and sliced)
  • 1 cup uncooked quinoa
  • 1 tablespoon paprika
  • 1 tablespoon maple syrup
  • olive oil
  • rock salt and black pepper


Method

  • Rinse your quinoa under cold running water for a few minutes. Add the quinoa to a saucepan of boiling water and boil for fifteen minutes. Once your quinoa is cooked, drain and set aside.
  • Meanwhile, drizzle some olive oil into a skillet or frying pan and cook your chicken breast until lightly brown all over. Once your chicken is cooked, set aside.
  • Drizzle a bit more olive oil into your skillet and add your sweet potato. Add the paprika and make sure all the sweet potato is evenly coated. Cook on a medium heat for approximately 10-15 minutes or until the sweet potato is soft in the middle.
  • Add the chicken to the skillet and cook for a few more minutes.
  • Add the beans, red onion and kale and warm through (you don't want to cook the greens for too long or you risk losing all the greeny goodness out of them).
  • Add the quinoa and mix through.
  • Finally, add the maple syrup and season with rock salt and pepper to taste.
  • Serve and enjoy!

  2. Oooh, this sounds amazing! I might have to replace kale with spinach (kale is so hard to get hold of here!) but either way I'm giving this a try!
